OREOS.

This is not going to be a long post. Basically what I'm here to tell you is that I made Oreos.

AND THEY ARE SO ADDICTIVE.

These cookies are actually amazing. It's my new favourite recipe.

Oreos
1 cup of unsalted butter
1 cup of sugar
1 egg
1 teaspoon of vanilla extract
2 cups of flour
3/4 cup of cocoa (the unsweetened stuff)
1 1/2 teaspoons of baking powder
1 teaspoon of salt

Icing
1/2 cup of butter
2 tablespoons of full cream milk, or 1 tablespoon of milk mixed with 1 tablespoon of cream
1 teaspoon of vanilla extract
3 - 3 1/2 cups of icing sugar

  1. Beat the butter and sugar with an electric mixer until light and fluffy. Add the egg and vanilla, and beat until well combined.
  2. Gradually add the flour, cocoa, baking powder and salt. Mix on the lowest setting, or with a wooden spoon.
  3. Once everything is incorporated, divide the dough in half, wrap each half in glad wrap and refrigerate for an hour.
  4. Preheat the oven to 175C (350F). Take one portion of dough out of the fridge at a time. Roll on a floured board to a 1/2 - 1/4 cm thickness, and cut with a 4cm cookie cutter.
  5. Place on lined trays and bake for 10 - 12 minutes in the preheated oven.
  6. To make the filling, beat the butter, milk/cream and vanilla until white. Gradually add the sugar, a half a cup at a time.
  7. Fill a small snaplock bag with the icing, cut off the corner, pipe onto half of the cookies and then sandwich together. I'm sure you could also just spread the filling with a knife, but that's a little mainstream, don't you think? :P
Makes about 40 sandwiched Oreos.

(Please forgive me if I've forgotten a "u" in any words. That key only likes to work sometimes, it seems.)
